The BEST TASTING Low Fat Chocolate Chip Cookies You've Ever Tasted
Our winner this month, Sara Pendrosa, notes that these cookies are soft, moist,
delicious and low fat. Perfect for the holiday season. They are easy to prepare
and being low in fat, will reduce some of your holiday worries so you can really
enjoy the season!

Ingredients
|
- 16 tablespoons (or measure 1 cup, or 8 ounces) low fat butter such as Smart Balance®
- 1 egg
- 2 egg whites (retain yolks for eggnog, perhaps --Ed.)
- 1 teaspoon vanilla extract
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 2 cups unbleached flour
- 1 teaspoon baking soda
- 1 12 ounce bag of good quality semi-sweet chocolate chips, such as Ghirardelli®
- 1/4 cup chopped walnuts (optional)
- (Optional: 1/4 teaspoon salt to bring out a bit more flavor --Ed.)

Directions

- Preheat oven to 350 degrees Fahrenheit
- Cream the butter and both sugars in a large bowl. Beat with electric mixer until
smooth. Add the egg and egg whites and the vanilla. Beat well. (Add optional salt
here, mixing well. --Ed)
- In a smaller bowl, combine the flour and baking soda. Slowly add the flour/baking
soda mixture into the larger bowl and beat with electric mixer until batter is smooth
and creamy. Fold in entire bag of chocolate chips, and if you like add the walnuts.
- Drop dough by large teaspoons (or scant Tablespoons) onto greased cookie sheet;
bake at 350 degrees for 11 minutes (the time REALLY depends on your oven so watch
that first batch!) Makes about 3 dozen.
