The November 2008
Recipe of the Month
Brownie Rum Treats
Here is a fun and easy brownie to make for cold autumn evenings (with a game of dominoes thrown in). If you want to omit the rum, you can substitute a wee bit of rum flavoring. We thank Anne Robinson for this recipe.

Ingredients
|
- 1/2 cup butter (4 ounces)
- 4 ounces semi-sweet chocolate chips or chopped
- semi-sweet bars
- 1 1/4 cup sugar
- 3 eggs
- 1 teaspoon vanilla
- 1 teaspoon white or light rum
- 1/4 teaspoon salt
- 1 1/4 cups flour
|
|
Directions
|
|
- Preheat oven to 350 degrees Fahrenheit.
- Grease an 8-inch square baking pan with butter or shortening.
- Very carefully, melt chocolate, butter and sugar in a medium saucepan, over low heat, stirring until smooth. Remove from heat and cool for a bit, as you will be adding the eggs next.
- Add eggs, one at a time, mixing well after each addition.
- Mix in vanilla, rum, salt, and flour, stirring until mixture is smooth and ingredients are combined. Do not overmix.
- Spread mixture into prepared pan.
- Bake for 25 to 30 minutes or until brownies begin to shrink from sides of pan.
- Allow to cool before cutting.
