CHOCOLATE CHIP PUMPKIN SQUARES
Here's a really fun recipe, submitted by one of our Very Enthusiastic Readers, perfect for Fall. You
just can't beat pumpkin pie and chocolate. Don't forget the glass of milk and the fire in the
fireplace, and definitely add a few bites of dark chocolate on the side as a lovely garnish.

Ingredients

- 2 cups all-purpose flour
- 1 Tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 1/4 cups sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup canned pumpkin puree
- 1 package (12 ounces) good-quality semisweet chocolate chips, or 12 ounces of good chocolate, chopped

Directions

- Preheat over to 350 degrees Fahrenheit. Line bottom and sides of a 9 x 13 inch baking pan with
foil, leaving at least a one inch overhang on all sides. Butter the foil if desired. (In addition to
keeping the cake from sticking to the pan, lining the pan with foil makes it easy to lift it out after baking.)
- Using a medium bowl, mix together flour, pumpkin pie spice, baking soda, and salt. Set aside.
- Cream together butter and sugar in a larger bowl, mixing until smooth; beat in egg and vanilla until
combined. Beat in pumpkin puree (mixture may appear curdled). Using low speed, mix in dry ingredients
until just combined. Fold in chocolate chips.
- Spread batter evenly in prepared pan. Bake until edges begin to pull away from sides of pan and a
toothpick inserted in center comes out with just a few moist crumbs, 35 - 40 minutes.

Serves 24. Great as everyday desserts, as after dinner treats or as snackables at parties or events.
