Ingredients

- 1 medium orange
- 1 cups raisins or chopped dates
- 2 Tablespoons melted shortening (or melted margarine)
- 1 teaspoon vanilla
- 1 egg
- 2 cups flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup sugar
- 1/4 cup chopped walnuts or pecans
- 6 ounces of broken-up chocolate (use chopped-up good quality chocolate. Make the pieces small enough so that they don't break up the bread when slicing. --Ed.)

Directions

- Heat oven to 350 degrees Fahrenheit.
- Line a 5x9 inch loaf pan with baking paper, or use margarine and flour. Set aside.
- Juice the orange, saving the juice. Then remove the white membrane from the peel, and chop up the orange peel. (A quick dunk into boiling water, then ice water, may help remove the pith.)
- Add the raisins or dates to the chopped orange peel and chop up a bit more to make a good mixture. Add the juice at this point.
- Stir in the shortening (or margarine), vanilla, and the egg. Add the sugar.
- Stir in the flour, salt, baking powder and baking soda. Mix well.
- Add the chocolate chips and the chopped nuts, stir to incorporate.
- Bake at 350 degrees Fahrenheit for 1 hour.
- Cool 15 minutes, unmold onto rack and cool completely.
