Recipe of the Month
Super Vanilla Chocolate Chip Cookies
We thank Sherry Erne, of Rochester Hills, for this great chocolate chip cookie recipe. It's perfect for after-school treats with a tall glass of milk, or for crisp autumn evenings and the start of cool weather.

Ingredients
|
- 2 sticks (4 ounces each, or, 1 cup total) butter or margarine, softened
- 1 small box (3.4 ounce size) vanilla pudding mix
- 1/4 cup sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 teaspoon of baking soda
- 2 1/4 cups of flour
- 1 package (12 ounces) of good quality semi-sweet chocolate chips

Directions

- Preheat oven to 375 degrees Fahrenheit.
- Mix the butter with electric mixer until soft, then add pudding mix, sugar, and brown sugar and continue mixing.
- Add vanilla, stir.
- Then add eggs, one at a time, stirring until well blended.
- Add baking soda and flour; mix until blended.
- Add the package of chocolate chips.
- Drop teaspoonfuls onto ungreased baking sheets, and bake the cookies at 375 degrees for 8 minutes or until browned. (This allows a terrific yummy texture, but if cookies get too brown too quickly, you can lower the oven temperature a wee bit, and monitor. --Ed.)
