Fantastic Fudge Ribbon Cake

We thank Rachael Steines and Margie Ware (of both Iowa and Wisconsin) for this amazing and special chocolate cake recipe. It's similar to those fabulous chocolate cupcakes with cream cheese filling, but you get a whole cake! Great for after school treats and any time you need a rich chocolate cake.

Ingredients

NOTE: Use these ingredients in the order given, to keep it all straight, as some things are used m ore than once throughout the recipe.

For the Cake

  • 1/4 cup sugar
  • 2 Tablespoons butter, softened
  • 1 egg
  • 2 Tablespoons milk
  • 1/2 teaspoon vanilla
  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup milk
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/3 cup milk
  • 4 envelopes Nestle's Choco-Bake® (or make a very thick chocolate sauce, by mixing 4 ounces extra-dark chocolate chips and 3 Tablespoons butter, thinned with 1 tablespoon cream, melt carefully in microwave. -Ed.)
  • 1 teaspoon vanilla
For the Frosting
  • 1/4 cup milk
  • 1/4 cup butter
  • Remove from heat. Blend in 2 envelopes Nestle's Choco-Bake® (or use two ounces thick dark chocolate sauce. --Ed.)
  • 1 teaspoon vanilla
  • 2 1/2 cups confectionary sugar.
Directions
For the Cake
  1. Grease and flour a 9 x13 x2 inch baking pan. Preheat oven to 350 degrees Fahrenheit.
  2. Combine in a bowl the cream cheese, sugar and butter. Beat until creamy.
  3. Add the next three ingredients (egg, milk, vanilla) and beat until smooth, set aside.
  4. In a large mixing bowl, stir together the dry ingredients (flour, sugar, baking powder, baking soda, salt).
  5. Add the milk and softened butter, mixing well, then beat for one and one half minutes.
  6. Add the eggs, additional milk, liquid chocolate, and butter. Mix well.
  7. Spread half of this batter in pan. Spoon cream cheese mixture over batter, spreading to cover. Top with remaining batter.
  8. Bake at 350 degrees Fahrenheit for 50-60 minutes. Cool thoroughly, frost.
For the Frosting
  1. Using a saucepan, boil the milk and butter and remove from heat. Do not over-cook!
  2. Blend in the thick chocolate sauce, add vanilla.
  3. Stir in confectionary sugar mix well, to get frosting consistency, but you may thin with a few drops of milk if desired.
  4. Frost cake.

Enjoy with cold milk, after school, or any time!

Enjoy!
