The September 2006 Recipe of the Month Chocolate Chip Cookies for After School This cookie recipe is tasty, and a little bit old fashioned in that it uses shortening and butter, but you can use all butter or margarine, if you don't like shortening...and it uses a touch less sugar, too. We thank Johanna R. Adams for this after school treat (and she mentions that some of the sugar can be further reduced by using a low-sugar baking product such as Splenda ® to keep the calories down.
Ingredients 1 cup butter or margarine, or use 1/2 cup butter and 1/2 cup shortening 1 1/4 cup dark brown sugar (can use only 1 cup to keep some sugar down if you like --Ed.) 1/2 cups sugar, or 1/4 cup low-cal sugar baking mix 2 eggs 1 1/2 teaspoons vanilla 2 1/4 cups flour 1 teaspoon baking soda 1 teaspoon salt 12 ounces (or more!!!!) good-quality dark chocolate chips Directions Preheat oven to 350 degrees Fahrenheit. Using a good stand mixer, cream butter and sugars together, then add vanilla. Add eggs, beating well but nor overbeating. Just really mix it well. Now add the dry ingredients, mixing well. If too dry, add a teaspoon of water, and continue mixing. Last, add the chocolate chips. Stir to incorporate, but don't overmix. Drop by rounded teaspoons-full onto baking sheets. If baking two sheets at a time, switch halfway through baking to ensure even baking. Bake 8-10 minutes...check first batch carefully to be sure not over/underdone... Cool, remove to rack.   Of course, serve with ice-cold milk or a flock of lattes!
