Recipe of the Month
Chewy-Fudgy After-School Cookies
This is a perennial after-school favorite, which comes to us from Mrs. C.
Cornell of Menlo Park, California. They are fun and easy to make, so
children can help out too!!!!

Ingredients
|
- 2 ounces unsweetened chocolate (can use 2 1/2 ounces if chocolate is in
bits...then add a pinch more sugar for a really chocolatey kick --Ed.)
- 1/2 cup vegetable oil (olive oil is fine to use, but probably not the very
strongest kind --Ed.)
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- (Additional sugar for rolling cookies in)

Directions

- Using a double boiler or very carefully in the microwave, melt the chocolate
and the oil, stirring to make smooth.
- When coolish, stir into the eggs, briskly, to incorporate, and add the sugar
and vanilla, carefully, stirring smooth.
- Stir the flour and baking powder together with the salt, to incorporate,
then stir into the chocolate mixture. Mix well, chill until firm (about 1
hour).
- Preheat oven to 375 degrees Fahrenheit.
- Roll the chocolate into 3/4 inch sized balls, and then roll these balls into
either granulated sugar or powdered sugar.
- Bake on ungreased cookie sheet at 375 degrees for 10-12 minutes...keep an
eye on the first batch to see how they go in your oven...you want a crackled
appearance on top, and not-over-dry. If not crackled, try increasing the
oven temperature to 400 degrees Fahrenheit, but cook no more than 10
minutes.
- Cool a few moments before removing to cooling rack.

GREAT with ice cold milk. Store airtight, but they will go fast!!!!!!
