The September 2003 Recipe of the Month
Oatmeal-Cherry-Toffee-Chocolate Cookies
Here's a fun recipe for back-to school lunches or after-school snacks. It's fun to make with the kids too, because you can shape it into logs and then slice it, rather like a refrigerator cookie. We thank Chris Blair of Des Moines, Iowa for this absolutely fun and terrific cookie recipe.

Ingredients
|
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 cup butter
- 1 egg
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla
- 1 cup dried cherries, snipped if needed
- 1 cup good quality dark chocolate, chopped
- 1 cup toffee bits
- 1 1/2 cups oatmeal (quick-cooking gives a sort of fluffier cookie, regular gives a sort of chewier cookie. -Ed.)

Directions
|
- Preheat oven to 350 degrees Fahrenheit.
- Cream butter and both types of sugar until nicely blended.
- Add egg and vanilla, beat lightly until smooth.
- Stir in flour and baking soda (if you used unsalted butter, add just a wee dash of salt to the batter at this point. -Ed.) and mix well.
- Stir in oatmeal, dried cherries, chocolate, and toffee bits.
- Shape into 2 logs. You can bake these immediately or chill. Slice into 1/2-3/4 inch slices and place on greased cookie sheet.
- Bake at 350 degrees Fahrenheit for 8-10 minutes. Cool, remove to rack.
- Makes 2 dozen.
