The August 2000 Recipe of the Month
Chocolate Chip Blondies
We thank Atlee Fraser, from (hey it's Australia again, but this time South Australia!!!) for this month's recipe. These bars are like a chocolaty brown sugar brownie. Not really a blondie, and not all the way a brownie. They're fun! Note: this is a very large recipe that can be halved.
Serves a crowd.

Ingredients
|
- 2 3/4 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup butter (that's about a cube and 1/3 or so, or 11 Tablespoons)
- 2 1/4 cups brown sugar (yikes!!)
- 3 eggs
- 1 cup nuts, chopped (walnuts best to help offset some sweetness, but pecans or macadamia nuts ok too)
- 1 package (6 ounces) chocolate chips (I always add more...push the limits on a 12 oz bag! Especially with these proportions of ingredients!!)

Directions
- Sift together the flour, baking powder and salt.
- Cream the butter, then add the sugar, stirring as smooth as possible.
- Add the eggs, one at a time, stirring well after each addition.
- Add the dry ingredients, stirring the stiff mixture to incorporate the dry ingredients.
- Stir in the nuts and chocolate chips.
- Spread in a greased 9-by-14 pan (two pans can also be used).
- Bake in a 350F oven, 25 to 30 minutes. Yield: approxiately 48 squares or bars. Monitor if using smaller amounts and check at 20-25 minute to see if a toothpick comes out relatively clean.
