Ingredients
|
- 2 cups flour
- 2 cups sugar
- 2 sticks (8 ounces total) butter, softened
- 1 1/4 teaspoon vanilla
- 5 eggs
- 10-12 ounces good quality chocolate chips
|
|
Directions
|
- Prepare pan. You may use a traditional loaf pan, or this works in a Bundt(r) pan as well. Grease and flour the pan, set aside.
- Preheat oven to 300 degrees Fahrenheit.
- Cream the sugar and the butter together.
- Add eggs, beating a bit after each addition to be sure to get a good emulsion.
- Add the flour in bits, for example, 1/4 or 1/2 cup at a time to be sure it is well incorporated.
- Add vanilla, beat smooth.
- Stir in chocolate chips. They will probably settle to the lower part during baking, but this is fine one you upend the cake to serve.
- Pour into prepared pan. Do not shake the pan to settle the batter, just put it into the oven.
- Bake at 300 degrees Fahrenheit for 1 hour. Use a toothpick to check to see if done, you may need to add 10 minutes or so. (Many recipes call for more flour, so this one will be a wee bit more moist, so cool completely and cut carefully.)
