Recipe of the Month
Chocolate Chip Fun and Friends Cake
This cake recipe is a real winner for pot-lucks, backyard parties, and coffee/tea parties...or, just for fun after a summer jaunt. We thank Mrs. Michael S. Fayne for this recipe

Ingredients
|
- 1 stick (8 tablespoons, or 1/2 cup) butter, softened (salted butter ok -Ed.)
- 1 cup sugar
- 2 eggs
- 1/4 teaspoon vanilla
- 1 1/3 cup flour
- 1 1/3 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1 cup sour cream (best to use but can substitute yogurt -Ed.)
- 1 1/2 cups (12 ounces) good-quality dark chocolate chips or chopped chocolate (use a bit less for a less rich cake)
|
|
Directions
|
- Preheat oven to 350 degrees Fahrenheit, and prepare a Bundt ® style pan or tube pan with shortening and flour.
- Cream butter and sugar together (in a bowl large enough for a one-cake cake-batter).
- Beat in eggs and vanilla, stir well.
- Sift in flour, baking powder, baking soda, and cinnamon. Stir quite well.
- Mix in sour cream (or acidulated milk, or yogurt), stirring well.
- Add chocolate chips or chopped chocolate, stir just to fully incorporate.
- Bake at 350 degrees Fahrenheit for 35-40 minutes. Test with toothpick (should be clean but not overly dry)... check at the earlier time, as ovens can vary.
- Cool and turn over onto cake plate. Don't worry, this is not a high-rising cake. And the chocolate chips will most likely sink to the bottom of the pan, so when you invert it, prepare for gooey, chocolatey fun.

Serve with friends with plenty of your favorite tea, coffee, milk, or iced tea.
Enjoy!
