Start of Summer Brownies

Extra eggs give these brownies a lift, so when they cool, they will be oh so rich!!! Decorate for the end-of-school/start-of-summer season by using cookies (for example, vanilla wafers decorated with a food-grade pen or frosting to make smiley faces, or snap chocolate wafers in half and place overlapping halves across to look like ocean waves, or use tiny rolled ice cream cookies to look like diplomas).

Ingredients

  • 2 cubes (8 ounces total) butter
  • 12 ounces good quality semi-sweet chocolate, chopped (or use chips)
  • 3 cups sugar
  • 4 eggs
  • 2 tablespoons vanilla
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
Directions
  1. Melt the butter and chocolate over a double boiler (or carefully in the microwave), stirring to combine. Set aside to cool a bit.
  2. Beat sugar and eggs together well. Use an electric mixer so that they can be really combined for several minutes to give the eggs some lift, and then drizzle in the chocolate and butter mixture. Mix well.
  3. Blending well, add the vanilla, then stir in the flour and salt, stirring to combine. It will make a thick batter. (If batter is really too thick, add an extra egg and beat again to mix. --Ed.)
  4. Pour into greased brownie pan (9 x 13 size is best) and bake 35-40 minutes at 375 degrees Fahrenheit. Brownies should pull away a bit at the edges and test mostly clean with a toothpick.
  5. Remove from oven and cool a bit. Before it is completely cool, place cookie decorations, if using, on each spot that will become a brownie when cut and served. Cool further, then cut and serve with milk and a smile!!!
