The June 2004 Recipe of the Month Heavenly Fudge We thank Lauretta Tew, who submitted this recipe. It is perfect for the picnic season, which is now just beginning. This is a cooked fudge, so it will keep for all those picnic baskets. Be careful cooking and stirring, as the sugar syrup will be hot, and be sure to use a candy thermometer. As this recipe also calls for marshmallow cream, it's a terrific way to use up the leftover marshmallow cream after the sundaes have been made!
Ingredients 3 cups sugar 2/3 cup evaporated milk 1 cube (4 ounces) butter, softened 12 ounces (1 1/2 cups) semisweet chocolate chips (one package) 1 Tablespoon vanilla 6 ounces marshmallow cream 2 cups chopped nuts (walnut or pecan) Directions In a large pan, put sugar, evaporated milk, and butter. Mix until all sugar is coated. Heat on medium heat until mixture becomes bubbly, (about 236 degrees); reduce heat. Ensuring that you will not splash the hot sugar syrup, carefully beat until mixture becomes creamy (about 5 minutes, soft ball stage) test in a glass of water for consistency. Then stir in the chocolate chips, vanilla, and the marshmallow cream. Beat until smooth. Fold in the nuts. Spread into a buttered 9 X 13 shallow pan. Let cool somewhat. When bottom is completely cool, cut into squares. Finish cooling. Pack fudge into containers.   Enjoy!
