Ingredients

For the Brownies
- 2 eggs, lightly beaten
- 1/2 cup (4 ounces) margarine, melted
- 1 cup sugar
- 2 ounces unsweetened chocolate, melted (if using bittersweet or semisweet, omit a wee bit of the sugar... --Ed.)
- 1/2 teaspoon mint extract
- 1/2 cup flour
For the Topping
- 2 Tablespoons margarine, softened
- 1 Tablespoon cream or half & half
- 1 cup confectioner's (powdered) sugar
- 1 teaspoon mint extract
For the Glaze
- 1 1/2 ounce bittersweet chocolate
- 1 Tablespoon margarine (add a dash more if the glaze is too thick)

Directions

- Heat oven to 350 degrees Fahrenheit. Lightly butter a 9-inch square baking pan.
- Mix eggs, melted margarine, sugar, the first of the mint extract, and then the melted chocolate together. Stir well.
- Add the flour, stir well.
- Pour into the prepared pan, smooth the top, and bake for 20 minutes (no more than 25 minutes).
- Cool and spread on the topping of softened margarine, cream, powdered sugar, and last of the mint extract, all mixed together until smooth and spreadable.
- Chill in the refrigerator while you melt the chocolate and last of the margarine together for the glaze.
- Spread chocolate glaze gently over the cream and mint topping. Chill again until firm. Cut into squares. Serve plain or with mint ice cream and chocolate sauce!!!
