The May 2006 Recipe of the Month Chocolate Chip Pancakes This recipe comes to us from a champion slumber-party mom, who also makes them for family get-togethers or just for sleepyheads on a late Saturday morning. Goes very well with sausage or bacon, if you want to make everything a bit early and keep it all warm, so you can skip the cold scrambled eggs! We thank Linda Charmain for this brunch treat. Recipe may be doubled.
Ingredients For the Cake 1/2 cup milk 2 Tablespoons butter, melted 1 egg 1 cup flour 2 teaspoons baking powder (not soda) 2 Tablespoons sugar 1/2 teaspoon salt 1/2 cup semi-sweet chocolate chips 1 teaspoon salt 1/3 cup cocoa powder 1/4 cup grated semi-sweet chocolate (optional) For the Frosting 1/2 cup butter 5 cups powdered sugar 10 Tablespoons (equals 1/2 cup plus 2 Tablespoons) espresso or very strong coffee, cooled to room temperature 2 ounces unsweetened chocolate, melted Directions Beat the milk, melted butter, and egg together in a medium size bowl. Add the flour, baking powder, sugar, and salt to the wet ingredients, stirring just to m ix and incorporate. Add a bit more milk or flour as needed to get a good pancake batter consistency (not too thin). Stir in the chocolate chips. Cook over medium heat, using your favorite griddle or pan, turn when bubbles form and stay on top of batter. (Don't forget to grease the griddle if using the old-fashioned kind--Ed.)   Serve with the grated chocolate or sweetened applesauce or your favorite topping/syrup. Makes 8-10 pancakes.
