Overnight Chocolate Mint Meringues

We thank Tabitha Vaughn of Volcano, California, for this easy and delicious meringue recipe. Be sure to swirl the chocolate carefully for the prettiest effect. Perfect for tea.

 
Ingredients

  • 2 egg whites
  • 2/3 cup sugar
  • 1 (12 ounce) package mint chocolate chips OR 12 ounces chopped good-quality dark chocolate and a dash of mint liqueur, melted carefully in the microwave or over a double boiler. (Can also use another liqueur...have fun experimenting with coffee or cherry liqueurs. --Ed.)
  • Dash of salt
Directions
  1. Arrange your oven racks so that you can put all the cookie sheets in at once (should not take more than three) but leave space for air to circulate.
  2. Preheat oven to 400 degrees Fahrenheit.
  3. Beat egg whites until stiff, adding sugar and salt gradually. Do not overbeat. Should be a bit glossy and quite firm, but not dry.
  4. Add melted mint chocolate chips OR the melted chopped chocolate with mint (or other) liqueur.
  5. Swirl the chocolate in carefully. Do not overmix.
  6. Drop by spoonfuls (swirling the tops for shape) onto greased cookie sheets.
  7. TURN OFF OVEN. (Very important! --Ed.)
  8. Put cookie sheets in the oven and leave in oven overnight.
  9. Remove cookie sheets in the morning and store meringues in airtight container.

Meringues will absorb moisture from the air, so eat quickly, especially with tea or a tall glass of milk. Makes about 4 dozen tiny meringues or about 3 dozen larger ones.
