Ingredients

- 1 cup sugar
- 1 cup margarine (works a bit better than butter in this recipe) at room temperature
- 1 3/4 teaspoon vanilla
- 2 eggs
- 3 cups flour
- 3/4 teaspoon salt (but you may use 1 teaspoon of salt if your margarine is low-salt)
- 1/2 teaspoon baking soda
- 8 ounces chocolate chips (minis are best for slicing) or chopped semi-sweet chocolate
- Optional: Semi-sweet chocolate shavings for dusting the tops of the baked
cookies.

Directions

- Meld the sugar and margarine together first, by mashing together with a fork or mixing at low speed.
- When well incorporated, add the eggs, mix well, and add the vanilla. Mix briefly.
- Add the dry ingredients, mix well.
- Stir in chocolate chips or chopped chocolate.
- Divide in half. Roll into logs no more than 2 inches in diameter. Firm up the shape, wrap in waxed paper or parchment paper, and refrigerate until quite firm, about 6 hours.
- Heat oven to 375 degrees f.
- Slice the cookies thinly, try for between 1/8 inches and 1/5 inches thick. 1/4 inch thick will not bake well.
- Place on baking sheets. Bake 10 minutes, but check at 8 or 9 minutes to be sure they are not over-browning.
- Cool slightly, then remove from baking sheets. If you decided to use the chocolate shavings, sprinkle a few over the baked cookies when they are hot out of the oven, before they cool. This will allow a nice melting but not scorching of the chocolate, but will make it a bit messier to store in the cookie jar!!!!
- Serve with milk!!!!
