The April 2010 Recipe of the Month
Old Fashioned Chocolate Toffee Cookies
Here is a dark chocolate version of old fashioned toffee bar cookies, and if you press them
very thin, they get a lovely toffee texture, too. We thank Mrs. Juliet L. for this submission,
based on an old family favorite that has gotten lots and lots of usage over the years. The kids
can help, and don't forget the milk, tea or Cabernet Sauvignon.

Ingredients
|
- 1 cup butter (two sticks) at room temperature
- 1 cup dark brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla (1 1/4 teaspoon vanilla ok, but no more --Ed.)
- 2 cups flour
- 1.4 teaspoon salt
- 6 ounces good quality semisweet chocolate
- (optional) 1/2 to 3/4 cups chopped walnuts, pecans, almonds, or macadamia nuts

Directions

You will get best results using a standing mixer for this recipe, rather than mixing
by hand, as the dough is purposefully stiff enough to be pressed into the pan, rather
than dropped like regular chocolate chip cookies.
- Preheat oven to 350 degrees Fahrenheit.
- Grease a jellyroll pan or oblong pan (13 x 9 inches) and set aside.
- Cream butter and sugar together, adding egg yolk and vanilla. Mix well.
- Stir in flour and salt. Mix, scraping down the bowl.
- Press dough into greased jellyroll pan or oblong (13 x 9) pan.
- Bake at 350 degrees Fahrenheit for 25-30 minutes (use less time if pressed more thinly).
- Remove from oven and place chocolate evenly over the top to allow to soften. Smooth
the softened chocolate and add the nuts (if using) evenly over the top.
- Cool partially, then cut into diamond shapes and cool completely.

For kids serve with a tall glass of cold milk, for afternoon get togethers serve with tea,
and for evening socials serve with your favorite Red wine.
