The April 2003 Recipe of the Month
Chocolate Dreams
This easy and fun recipe for no-bake chocolate, coconut, and oatmeal cookies comes to us from Cecile Hamel-Roy. It's perfect for getting ready for springtime, and with the optional cherries, it's a pretty and festive tea-party cookie too!!!

Ingredients
|
- 1 stick (4 ounces) margarine
- 3/4 cup white sugar
- 1/2 cup packed brown sugar
- 1/2 cup cocoa powder
- 1/2 cup milk
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 2 cups oatmeal (suggest quick-cooking for chewy texture --Ed.)
- 1 cup coconut
- (Optional: 1/4 cup chopped candied cherries)

Directions

- Place margarine, white and brown sugars, cocoa powder, and milk in a medium saucepan.
- Over medium heat, bring to a boil and, stirring, allow to boil for two minutes.
- Remove from heat and add the vanilla, salt, oatmeal, and coconut; mix well. If using the chopped candied cherries, add at this point.
- Drop by spoonfuls onto waxed paper. Let cool and enjoy! Store in container to keep from drying out, but these are so much fun, they will probably disappear quickly!!!! (Makes a few dozen cookies, depending on size of spoons used for dropping!!!! --Ed.)
