Recipe of the Month
Chocolate Chip Sour Cream Cake
Here is a recipe that is great for cold and chilly Winter nights, as it is served warm. It also works as a harbinger of Spring because it is pretty when sliced, tastes terrific, is easy to make, and can be shared easily. It's a pleasant and happy cake. We thank Michelle S. for this recipe, and she tells us it's great for picnics, too, once the weather is balmy.

Ingredients

- 7 Tablespoons butter
- 1 cup sugar
- 2 eggs
- 1 1/2 cups flour
- 1 1/4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla OR 1 teaspoon rum
- 1 Tablespoon milk
- 1 cup sour cream (low fat ok, but NOT imitation or non-fat Ed.)
- 10-12 ounces good quality chocolate chips
- 2 tablespoons additional sugar

Directions

- Prepare a 9x13 inch cake pan (grease and flour).
- Preheat oven to 350 degrees Fahrenheit.
- Soften the butter and beat with the first 1 cup sugar.
- Add eggs, beat.
- Add flour, baking powder, baking soda, and cinnamon, stir very well.
- Stir in vanilla OR rum, add the sour cream and the milk, stir well.
- Toss the additional 2 Tablespoons of sugar with the chocolate chips. (This is to help keep them from sinking entirely to the bottom.)
- Pour the batter into the prepared cake pan.
- Carefully layer the chocolate chips onto the top of the batter; it is ok to push a few down in.
- Bake at 350 degrees Fahrenheit for 30-35 minutes (cake should start to pull away from the pan sides add some time if necessary, but do not over-bake).
- Cool in pan.

Serve warm, and store at room temperature. This cake does not take well to refrigeration, which is a great excuse to have a few
friends over to celebrate the coming of Spring.
Serves 12 (of course they may want more!)
