Chocolate Chip Zucchini Cake
Here is a great after-school or tea-party cake. It's a bit out of season for zucchini, but the larger
markets should have some handy. But it's a terrific cake!!! We thank Molly Sandheely for the recipe, and
we suggest serving it as is, with no glaze or frosting, to truly savor the taste!!!

Ingredients
|
- 1/2 cup butter
- 1/2 cup vegetable oil
- 1-3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- pinch salt
- 1/4 cup sour cream, thinned with 1/4 cup milk
- 2 1/2 cups flour
- 4 Tablespoons cocoa powder
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- pinch of nutmeg
- 2 cups shredded zucchini (set aside on paper towels to dry a bit)
- 1 cup good-quality chocolate chips or chopped semisweet chocolate

Directions

- Preheat oven to 325 degrees Fahrenheit
- Grease and flour a tube pan such a Bundt ® pan
- Cream butter and oil with the sugar.
- Add the eggs, vanilla, pinch of salt, and thinned sour cream, beat for a moment to incorporate.
- Mix in flour, cocoa powder, baking powder, baking soda, and spices, beat well to make a smooth batter.
- Add zucchini and chocolate chips, mix until incorporated.
- Bake 55 minutes, adding time if needed, depending on the zucchini.

Goes well with a tall glass of milk after school, a serving of tea in the afternoon, or with candles and wine in the evening.
