The March 2006 Recipe of the Month Chocolate Cherry Tea Loaf This recipe comes to us from Maria S. Perriot, who says its a treat at tea or coffee parties, but it works well after school, too. Its a very easy recipe to mix and bake, and makes a dense, moist loaf.
Ingredients 1 1/2 cups flour 1 cup, less one Tablespoon, sugar 3/4 cup milk 1/2 cup margarine 4 egg yolks (use the whites for chocolate meringue cookies --Ed.) 2 teaspoons baking powder 1 teaspoon almond extract 1/2 teaspoon salt 3 ounces good quality chocolate chips, melted 2 ounces (half a 4 ounce jar) maraschino cherries, chopped, plus 2 Tablespoons cherry juice from the jar Directions Preheat oven to 350 degrees Fahrenheit. Grease and flour a loaf pan, (9 inches). Mix all ingredients, beating for two or three minutes, until well mixed. Pour into pan, smooth top. Bake for one hour. Check for doneness with a toothpick, and add 5 or 10 minutes if necessary. Cool.   Dust with powdered sugar if desired. Serve in slices.
