Ultra-Rich Dark Chocolate Mousse
This recipe for a lovely, very dark, very rich, and very easy chocolate mousse comes to us from M. K.
Shipman, in California. She tells us that she and her friends make it often. Here at the Chocoholic.com Test Kitchen, we can see why. Is it a lovely dark mousse, and so rich that just a taste can give you that heavenly
chocolate-ness that a good dessert should. One batch can therefore go quite a long way. Be sure to share with friends!

Ingredients
|
- 12 ounces ultra dark chocolate chips (if using semi-sweet, use only 3/4 cup sugar --Ed.)
- 8 eggs, separated (use pasteurized eggs if possible)
- 8 ounces butter, cut into medium pieces
- 1 cup sugar

Directions

You will need a double boiler, an extra whisk, and two mixing bowls for this recipe.
- Using a double boiler, melt the butter, sugar, and chocolate very slowly, stirring carefully.
- Remove from heat and cool chocolate mixture slightly.
- Lightly beat the egg yolks, just until frothy.
- Stir egg yolks into chocolate mixture, mixing well, being careful not to "cook" the eggs.
- Whip the egg whites, using clean beaters or whisk and a clean bowl, until firm (but not stiff) peaks form.
- Fold egg whites carefully into chocolate mixture (folding until well mixed but still light-textured).
- Pour into individual servings, or into a pretty casserole dish, and chill until set, at least an hour, or overnight.

Serves 12 at least, and more...it is very rich!
