Black and White Cookies

This recipe comes to us from Jessica Montalvo, and it's a very pretty frosted cookie, fun for Valentine's Day gift-giving or as a fun baking project with children. This recipe can easily be halved.

 

 
Ingredients

Cookie
  • 1 3/4 cups sugar
  • 8 ounces (2 sticks) unsalted, softened butter
  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon lemon extract
  • 2 1/2 cups cake flour
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
Frosting
  • 4 cups powdered sugar
  • 1/3 to 1/2 cup boiling water (or carefully boil milk if you want richer frosting)
  • 1 teaspoon vegetable oil
  • 1 ounce bittersweet good quality chocolate
Directions
Cookie
  1. Preheat oven to 375 degrees. Butter two baking sheets and set aside.
  2. In a large mixing bowl, combine the sugar and butter and mix until fluffy. Add the eggs, milk, and vanilla and lemon extracts and mix until smooth.
  3. In a separate, medium bowl, combine the flours, baking powder, and salt and stir until mixed. Add the dry ingredients to the wet in batches, stirring well to combine. Using a soup spoon (or large, rounded teaspoonful--Ed), drop spoonfuls of the dough 2 inches apart on the prepared baking sheets. Bake until the edges begin to brown, 15-20 minutes. (Can burn at higher temperatures...check at the 15-20 minute mark and be sure the cookies are golden brown not dark brown. Can bake longer if needed. --Ed.) Allow to cool completely.
Frosting
  1. Place the powdered sugar in a large bowl. Gradually add enough of the boiling water (or milk) and vegetable oil to the sugar, stirring constantly, until the mixture is thick and spreadable.
  2. Remove half of the frosting to the top half of a double boiler and set over simmering water and add the chocolate. Warm the mixture, stirring, until the chocolate is melted and the frosting is smooth. Remove from heat. Or you can carefully melt the chocolate in a microwave oven checking and stirring often. With a brush, or knife, coat half the cookie with chocolate frosting and the other half with white frosting.
