Recipe of the Month
Vanilla-Cinnamon Hot Chocolate
Perfect when it's icy cold out, if you're winter star-gazing, or relaxing in front of the fireplace. We thank Cleo of Reno, Nevada, for this easy, warming recipe.
Makes four servings (one cup each) but can be halved.

Ingredients
|
- 4 cups milk
- 4 Tablespoons plus 2 teaspoons sugar
- 4 Tablespoons plus 2 teaspoons good-quality cocoa powder
- 1/4 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Grated chocolate for topping
- A few chocolate chips to melt into the cup
- Whipping cream or tiny marshmallows to float on top

Directions
|
- In a good-sized saucepan, carefully heat the milk (on medium or even
medium high heat) but DO NOT BOIL.
- Remove from heat, and whisk in the cocoa, sugar, cinnamon, and vanilla.
- Ladle into mugs, into which you have placed a few chocolate chips, for melting,
and then top with the whipping cream (or marshmallows) and dust with the grated chocolate.
- Stir and enjoy on a cold winter's evening.
