Recipe of the Month
Chocolate Fudge Cheesecake
This recipe makes terrific chocolate cheesecake, and comes to us from
Lynn Nardo, of Hepzibah, West Virginia. We thank her for this delicious
and fun to make treat to start the New Year!!!

Ingredients

Crust
- 1/3 cup melted butter
- 1/2 cup confectioners sugar
- 1/3 cup good-quality cocoa
- 1 1/2 cups crushed vanilla wafers (Combine these and press into bottom of a
springform pan. Set aside.)
Cheesecake Filling
- 2 cups (or a 12 ounce package plus a few) semisweet chocolate chips
- 3 packages (8 ounces each) cream cheese, softened
- 1 14-ounce can of sweetened condensed milk
- 4 eggs
- 2 teaspoons vanilla

Directions

- Preheat oven to 300 degrees Fahrenheit. You will need a 9" springform
pan.
- Melt chocolate chips very carefully in microwave, perhaps 2 minutes,
stirring halfway through. (Watch carefully to avoid burning or
"seizing" the chocolate... --Ed.)
- In a large bowl, beat cream cheese until fluffy, then beat in condensed
milk and eggs.
- Mix in melted chocolate and add vanilla. Stir.
- Pour into pan, bake for 1 hour and 15 minutes, or until center is set
(may be a little wobbly).
- Cool completely then refrigerate for several hours. Enjoy!
