The January 2004 Recipe of the Month
Anne Robb's Infinitely Fun Chocolate Chip Cookies
These are infinitely fun cookies because of the many fun variations that can make them chewier, crunchier, or just plain different! According to Anne, these were always a hit at college get-togethers, especially after a rough week of finals!!!!!

Ingredients
|
- 1 cup margarine
- 1 1/2 cup brown sugar (light or dark both ok...dark will taste richer, a touch sweeter. -Ed.)
- 1/2 cup sugar
- 1 1/4 teaspoon vanilla
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 3/4 cup flour
- 1 cup oatmeal
- 12 ounces good quality chocolate chips
Variations and additions to try:
- add 1/3 cup coconut or
- add 1/4 cup crushed pretzels or
- add 1 cup pecans or
- add 1/2 cup crunch cereal such as frosted flake-type cereal or crispy rice-type cereal or
- add a Tablespoon or two of cocoa powder (but increase margarine by one Tablespoon too)
- swirl in 1/4 cup melted chocolate or
- substitute 1 cup whole wheat flour for the 3/4 cup regular flour or
- substitute muselix for the oatmeal

Directions
|
- Heat oven to 350 degrees Fahrenheit.
- Cream margarine and both sugars in bowl until smooth.
- Add vanilla, stir well.
- Add eggs, mix well, then add salt, beating mixture.
- Now add the rest of the dry ingredients, baking soda, flour, oatmeal, etc., mixing well.
- Last, add the chocolate chips and any additions such as nuts, cereal, pretzels, etc., if using. Stir.
- Drop onto ungreased baking sheet.
If 1-inch balls, (will spread to 2 inches) then bake at 350 degrees for 10-12 minutes.
If 2-inch balls (will spread to 3+ inches), then bake at 350 degrees for 12-14 minutes.
- Due to the brown sugar, these cookies will spread flat and darken, almost
like lace cookies, so for the first batch, check often until the timing
seems right for your oven. Try one sheet at a time, to monitor as they
bake.
- Remove from pan and cool. They will be flat and chewy. If too crunchy due
to all the brown sugar, stir in a bit of flour to the batter and all should
be well for the next round.
