Moonstruck is one of eight U.S. companies featured in the "Chocolate Companion, A Connoisseur's Guide to the World's Finest Chocolates" by Chantal Coady. One of the reasons for this high quality is that Moonstruck selects its cocoa beans as intensely as one might select wine grapes. To highlight certain flavor notes, they import Grand Crus (great growth) beans which make up only about 10% of the cocoa beans produced. Moonstruck's chocolate boasts an astounding cocoa content from about 67% upwards to 70%, while most American chocolates are between 17% - 35%. It doesn't end there - Moonstruck is comprised of three founders plus a European-trained chocolatier.
